Onions Didn't Evolve to Make You Cry — You're Just Collateral Damage

Why does cutting an onion often cause tears?

Nobody sets out to cry while making dinner, yet chopping a single onion is often enough to do exactly that, stinging eyes, involuntary tears, sometimes even a runny nose, all triggered by a vegetable that, moments earlier, was sitting perfectly innocuously on the cutting board. It feels almost personal, like the onion is doing this specifically to ruin your evening. In a strange, roundabout way, it kind of is, just not for any reason that has anything to do with humans.

Onions build up a chemical defense system as they grow, storing certain sulfur-containing compounds and enzymes in separate parts of their cells, kept apart from each other under normal circumstances. This separation matters because those compounds are only dangerous, to whatever might be attacking the onion, once they're allowed to mix. As long as the onion's cell structure stays intact, everything stays safely compartmentalized and inert.

The moment a knife slices through an onion, that careful separation collapses instantly. Cutting ruptures the onion's cells, and the two previously separated components, an enzyme called alliinase and various sulfur compounds, suddenly come into direct contact with each other for the first time. That collision sets off a rapid chemical chain reaction, ultimately producing a volatile gas called syn-propanethial S-oxide, a genuinely unpleasant little compound whose entire purpose, from the plant's evolutionary perspective, is to cause irritation.

This gas doesn't stay politely contained near the cutting board either. It rises into the air as a fine, invisible mist, and when it reaches your eyes, it dissolves into the thin layer of tear fluid coating your eyeball's surface. Once dissolved there, the compound reacts chemically to form a small amount of sulfuric acid, an irritant your eyes are, understandably, extremely sensitive to. Your body responds the only way it knows how, triggering the lacrimal glands to flood the eyes with tears specifically to flush out and dilute whatever irritating substance has suddenly appeared, which is the entire physiological reason chopping onions leads directly to crying rather than just mild discomfort.

From the onion's evolutionary standpoint, none of this chemistry exists because of some grudge against home cooks. This defense system evolved as a deterrent against animals, insects, and other organisms that might otherwise dig into the plant's underground bulb and eat it before it has a chance to reproduce. An irritating chemical response that causes pain and discomfort upon damage is a fairly effective, low-cost way for a stationary plant to discourage being eaten, since it can't run away or fight back in any more active sense. Humans just happen to have similarly sensitive eyes to whatever animal this defense was originally aimed at deterring, which makes us collateral damage in a chemical arms race that has nothing to do with dinner prep whatsoever.

Not every onion produces this reaction with equal intensity either. Different onion varieties contain varying concentrations of the sulfur compounds responsible for the effect, which is part of why some onions, particularly milder, sweeter varieties, cause noticeably less eye irritation than sharper, more pungent varieties packed with higher concentrations of those same defensive chemicals. Soil conditions and sulfur content in the ground where the onion was grown can influence this too, meaning the same onion variety can occasionally produce more or less irritation depending on where and how it was cultivated.

There are a handful of commonly repeated tricks for reducing the tears, chilling onions before cutting, using a sharper knife to minimize cell rupture, cutting near running water or a fan, and while the effectiveness of each varies depending on who you ask, they all work, to whatever degree they do work, by either slowing the chemical reaction down or redirecting the resulting gas away from your eyes before it has a chance to dissolve into your tear film.

It's a small, oddly elegant example of a defense mechanism completely indifferent to its actual audience. The onion isn't trying to make anyone cry at the dinner table specifically, it's running the exact same chemical defense it would deploy against a hungry insect or burrowing animal millions of years ago, and human eyes just happen to be similarly vulnerable to the same basic chemistry, whether or not the plant ever expected to end up sliced on a kitchen counter in the first place.
